We Celebrate Food for the Soul

In memory of a great friend to the Chantilly Writers.Bill Gavin's Sausage Ziti1 pkg. turkey sausage (hot or mild)1 15 oz. container part-skim ricotta cheese2 eggs, beaten4 C grated parmesan cheese1 16 oz. box ziti pasta, cooked and drained1 28 oz. jar pasta sauce (light or regular)1 C shredded mozzarella cheese1. Preheat oven to 350 degrees. Cook sausage by filling 10-12" skillet with 1/4 inch of water. Bring to boil over high heat, add sausage and cover. Turn heat down and simmer for 8-10 minutes. Remove cover, turn heat back to high and boil off water, turn links until browned. Cut sausage into bite-size pieces and set aside.2. In large bowl, combine ricotta, eggs and parmesan. Set aside.3. In another bowl, combine pasta, sausage and sauce.4. In a 13x9 baking dish, spoon 1/2 of the pasta mixture; evenly top with cheese mixture, then remaining pasta. Sprinkle top with mozzarella.5. Bake uncovered for 30 minutes.
