Caprial's Desserts

Caprial Pence is the executive chef and proprietor of Caprial's Bistro in Portland, Oregon, which opened in 1992. Caprial has earned the praise of critics nationwide, as well as many awards. Shortly after graduating from the Culinary Institute of America, she was named Best Chef: Pacific Northwest by the James Beard Foundation -- the first woman to receive this prestigious distinction. In 1995, her cooking show was nominated for the Beard Foundation's Best Television Show Cooking Award. Caprial's latest cooking series can be seen on public television nationwide. She lives in Portland with her husband, John, and their two children Melissa Carey loves old-fashioned desserts like double-crusted fruit pies, chocolate-banana cream pie, and decadent chocolate layer cake. As pastry chef at the Bistro, she turns out her own unique interpretations of classic desserts.
